Vinification method: Pigeage by hand
Syrah 100%, Regional Wine of Ismaros, Dry Red
A full-bodied Syrah, powerful but soft. Smooth fine-grained tannins, with layers of black cherries, spices, coffee, cacao, liquorice notes and toasted oak in the background. Rich concentrated aftertaste and a ripe lingering finish.
Aged for 12 months in French oak and bottled unfiltered, Syrah Kikones will reward cellaring for up to 10 years.

Red vinification
Red grapes are processed according to a method inspired in Burgundy. In this case, small (40-50hl) open inox tanks are used to practice the "pigeage" method. The main feature of this method is that the marc is broken manually with a special stick (pigeur) during fermentation, instead of using a crasher at the beginning of the procedure. Finally, red wines age in French oak barrels for approximately one year, where maloloactic fermentation proceeds with the help of naturally existing bacteria. After one year, red wines are transferred to inox tanks, where natural clarification takes place in two to six months time. No fining or filtering is used in red winemaking procedures, in order to preserve natural flavours and characteristics.

Domaine Kikones, Thrace - Artisans Melina and Vassilis Tassou at work (video)
Artisans Melina and Vassilis Tassou at work. A team comprising of Pomak ladies, Pontian-Greek and Russian. Someone cracked. ” This is a National Geographic winery!” Attention to detail. Whole berry fermentation. The ‘carrot’. Leonidas: the master of pigeage.

Kikones Rosé
Dear Milena, Last weekend we found the perfect weather to enjoy your Kikones rose.

As stated on your website: Lemnio 60%; Syrah, Cabernet Sauvignon 40%, Dry Rose A blend of the ancient Greek variety Lemnio, Cabernet Sauvignon and Syrah. Intense orange-pink colour, orange-red hues. A trully remarkable Rose with fruity aromas of blueberries, raspberries and pomegranate. Strong fresh red fruit characteristics on the palate with soft oiliness followed by the sweetness of alcohol. Lingering finish.

It was a perfect drink, we took our time to slowly drink it and we really, really enjoyed the fresh fruity aroma's! Thanks, Marcel&Ceri
