Vinification: Some of the best vineyards in the region are carefully managed throughout the year using leading viticultural methods of crop reduction, canopy management, measured restriction in water availability and the use of precision techniques to define vineyard zones with premium terroir. Quality is assured by hand harvesting only on the day that monitoring indicates that flavour and aroma compounds are at their peak. The small boxes are grapes are unloaded onto a sorting table so that any less than perfect bunches can be discarded. The grapes are gently crushed and moved without pumps into a fermenting tank. Following a short maceration period, the lightly coloured juice is run off the skins and very slowly fermented at 12ºC to preserve the full aromatic expression of the wine

Food Pairing: This wine is a great accompaniment to fish, shellfish and salads. It possesses sufficient texture and body to enjoy with chicken and other lighter meats. A great combination with Indian, Thai and sushi cuisine

Winemaker’s notes: Crystal clear ruby-cherry colour. Fragrance rich with the deep red fruits of Aragonês combined with floral notes from the elegant Touriga Nacional. Full presence and texture on the pallet, a suggestion of sweetness, perfectly balanced with a refreshing level of acidity
